Bigarreau describes any sweet cherry with firm flesh, the 'Bing' for example. In the 1920s, M.B. Crane began a breeding program using the collection of the John Innes Institution at Merton, and there produced a series of new varieties of high quality. We offer two of them. The Merton Bigarreau is dark black, dense, purple fleshed, with the richest "cherry" flavor of any bigarreau, preferred to Bing at every local public tasting where the two have appeared together.
