Mirabelles are that class of small, sweet, yellow fruited plums of species Prunus insititia, probably the remote parent of the green gage. Considered by the French, by whom it is beloved (and where only it is found) as a culinary fruit par excellence, we have known mirabelle enthusiasts to bring them along for lunch or for snacks. In Lorraine, they distill a famous eau de vie of mirabelles. There are several varieties of mirabelle, that from the countryside of Nancy are largest and usually most productive, one tree will suffice for an August full of tarts, jams and trifles.
