"Gem" peaches are impressively large, deep orange fleshed, purple next the pit, dense, melting, acidulous and savory, with syrupy juice, ripening late season, termed "California" peaches among Eastern growers. J H Hale is the original type of gem among peaches, about the largest of all with yellow-orange flesh and when well grown, about the best eating. They are demanding however, needing a long rainless summer, rigorous thinning, and is our only peach that requires cross-pollination (use Carman). But this is worth all that trouble.
