Largest of the umes, is in fact a hybrid between apricot and ume but always treated as an ume in the classical culinary repertory. Fruits large, as for an apricot, and flattened; orange with slight pink shoulder when ripe. Among the last of the umes in season. Because of its apricot ancestry, Bungo may be eaten as a fresh fruit when fully ripe, though its flavor is far different from any other stone fruit ... it may be served for a dessert, though we may hesitate to suggest such a heterodox use for ume.
