Souvenir du Congres Pomologique
No summer would be complete without the taste of 'Bartlett' pears, which fairly defines August fruit in the orchard. Souvenir du Congres is remarkable as the largest of fine-textured pears, with all the same musk flavor and coming fully two weeks sooner. Unlike 'Bartlett', should not ever be allowed to remain on the tree to ripeness, but gather and store in the cool for ten days or so before ripening at room temperature - frequently it will commence to yellow and soften while in cold storage, which produces as fine a finish. Fruits are truly immense, to nine inches long, same shape as 'Bartlett', but broader; truly County Fair worthy. Harvest end July, store ten days. On Betulaefolia.
